a tortilla folded over a filling of cheese, tomato sauce and other things you’d put on a pizza.
Craving pizza and being gluten free while trying to eat better is a toughy, but last week I was dying (cue dramatics) for a pizza. I saw these on Pinterest and I figured, “Why not? This actually doesn’t look too hard.” They weren’t and they were GOOD!
The only thing I was kind of apprehensive about was this being on corn tortilla, because who knew how this would turn out. I had it on white corn as opposed to yellow and it had no effect on the taste.
- 2 white corn tortilla
- A few slices of pepperoni (I had about 4 on each)
- 1/4 cup of pizza sauce
- a small amount of mozzarella- the amount is up to you but I’m counting calories
Layer the tortilla as you would a crust (sauce, cheese, meat). Coat the skillet with non stick spray (I used Trader Joe’s coconut oil spray) and heat to medium-low. Carefully transfer made tortillas to skillet and allow to cook for 5-7 minutes. Make sure you don’t toast them or they will crack, but they do need to be soft to avoid cracking when folding. Fold over and press lightly so it’s in half. Flip the tortilla over for 3-5 minutes. Remove and place on plate and allow to cool. Using a pizza cutter or a knife, and cut in half (you should have two “triangles”). EAT!
